Easy Creative Cooking

Every day I challenge myself to create exciting and different meals for my husband and me.  I love to make homemade french fries. Today, I fried broccoli (without breading). The taste was unique and interestingly good. The regurgitation I'm experiencing...
not cool! My advice....Don't fry any broccoli.

Tonight, I properly digested my "Mini Strawberry Cheesecake Tarts" so I wanted to share with you. They turned out so pretty too! Perfect for the big game on Sunday! Feminine-- yes, but even the guys will enjoy their delicate nature after the "Game Day Bucket go BOOM!"

 Mini Strawberry Cheesecake Tarts

1 pkg. of 15 mini fillo shells
2 cups of your favorite fat free milk
1 pkg. Jello sugar free, fat free cheesecake pudding
2 tbsp. Nestle mini semi-sweet chocolate morsels
1/2 tsp. Crisco
15 squirts of Reddi Whip whipped cream
5 Strawberries

Remove the fillo shells from the freezer and let thaw.  Place chocolate and Crisco in a small bowl.  Microwave on HIGH for one minute.  Stir well until all morsels are melted.  Dip each shell into the chocolate to coat the edges. Set aside to dry.  Mix cheesecake pudding and milk in medium bowl for two minutes with whisk. Place pudding in refrigerator for 5-10 minutes to set.

While the pudding is setting, slice strawberries into thirds vertically. You will have 15 pieces of strawberry after cutting. Fill a plastic sandwich bag with 2/3 cup of the cheesecake pudding. Snip off the corner. Pipe the pudding into each shell filling to the top. Garnish with a strawberry slice, squirt of whipped cream and one mini chocolate morsel.  Fabulous! Low calorie and low fat.

These are so simple. They take about 15 minutes to make start to finish! You can use the same recipe with any flavor pudding and different fruits. Leave me a comment to let me know how yours turns out. I'd especially like to know how the man of your life likes them. My husband loved them!
