Baby Shower Cupcakes for the Daddy!


My first granddaughter is due in 13 days!
Tonight is the "man-shower" for the Daddy
My contribution to the party are these cupcakes
I found these darling free printables at Embellish
I printed them on a sheet of Avery 8165 label paper
then stuck them to a piece of card stock for stability
Cut a regular straw into 3 pieces, slit the end and inserted the topper!
So simple....


Extra simple cupcakes using Pillsbury cake mix!


Easy Classic Vanilla Buttercream Frosting from Savory Sweet Life
The only ingredient not pictured above is the butter.
WHY?
because it's imperative NOT TO USE SALTED BUTTER.
Don't do it!
I think me and salt have a love/hate relationship
and...this time I hate salt.
Did I say not to use salted butter in this recipe?
I used Wilton "PINK" to color the frosting


What do you think?
I think they are girlie enough for a shower
and an expectant grand-girl
but still a touch manly 
with the brown's and yellow.

Make your Own Grilled Chicken Salad

 
 
I've always loved salads
I especially love LongHorn's Grilled Strawberry Salad
I also love Panera Bread's Strawberry Poppy Seed Salad
Since I don't live near either of these
I make my own and you can make your own Grilled Chicken Salad too!
Here's how...

The Pampered Chef Grill Pan is the "coup de grace"
when grilling chicken for a salad or any main dish!
I start by cutting my chicken in thin, long pieces
 and then grill on the stovetop.
Takes about 10 minutes and done!
 
Mrs. Dash Garlic and Herb seasoning is a MUST!
Sprinkle on your chicken while cooking
The taste is restaurant-style or simple perfection.
 
While the chicken is cooking,
prepare the rest of your salad.
I use this organic Spring Mix from Earthbound Farm
 You can use any fruit you like
Today, I used watermelon, pineapple and grapes together
I love strawberry and pineapple together too,
fresh apples, mandarin oranges, fresh oranges
any fruit you like that is not mushy will work
I never use blueberries, don't know why?
 
 
I also add something crunchy too
pumpkin seeds, pretzels (gluten-free)
pecans, croutons (gluten-free)
basically anything I consider healthy
that can add some crunchy texture
 
Once your chicken is done
spoon on the top of your greens
sprinkle with the dressing of your choice
I choose to make my own.
Today I used pomegranate red wine vinegar (1 tbsp.)
combined with olive oil (1 tbsp.), lemon juice (1/2 tsp.) and
just the slightest dash of sugar
I don't measure these I just keep mixing until
I get the taste I want.
 
I also love lime dressing prepared with
100% virgin olive oil and lime juice.
Lime dressing makes the fruit taste so sweet
Any vinaigrette enhances the sweetness of fruit.
Balsamic vinegar and olive oil is tasty too.
Remember, to reduce the acidity just add a pinch of sugar.

Can Cabbage help Control Anger?

I served boiled cabbage for lunch yesterday and had the leftovers for dinner. Did you know cabbage is one of the "world's healthiest foods"? Cabbage is a cruciferous vegetable that boasts many health benefits including: cancer prevention, anti-inflammatory properties and a powerful stomach tonic. Cabbage is also a natural cholesterol lowering food.

The best way to cook cabbage to maintain nutrients is to healthy saute. Heat 5 tbsp. water in a stainless steel skillet on high heat. When bubbles begin to form, reduce heat to medium, add shredded cabbage, cover and cook for five minutes. Cut off heat and let stand covered for two more minutes before you serve. You can see from the picture, I thinly shred my cabbage. It is yummier that way! My Aunt Nell taught me that!

Whilst (I love that word! I learned it in London) I was preparing the cabbage, I posted a face book question asking "How long do you boil your cabbage down?" God used that cabbage to show me something. Can cabbage help control anger? Ephesians 4:26-27 says "Be ye angry, and sin not: let not the sun go down upon your wrath: neither give place to the devil." I began to wonder how long it takes us to boil down or simmer down when we get angry.

Just like the cabbage, if simmered for 5 minutes and cooled for 2, it is tasty and beneficial for our bodies. If we get angry and cool down quickly, we can avoid sin which is healthy for our bodies. Alternately, if cabbage simmers too long, all the nutrients are removed, tastes bad and the color is poor. If we simmer too long with anger, we give place to the devil which is not healthy, causes us to act out and is sinful.

Unresolved anger has many detrimental effects on our health. Anger is linked to high blood pressure, heart disease, stroke, cancer, stomach problems and even the flu! The next time you get angry think of a head of cabbage and remember "Simmer 5, Cool 2!" This visual mantra should distract you from being angry, force the devil to find another place and improve your health!

Squash Spaghetti or Spaghetti Squash?

Either way you say it
SO tasty and healthy!

Here's what you do...
Bake a medium-size spaghetti squash
at 350 degrees for one hour until tender
See my knife mark 
inserted to make sure it's done?
"Done" if your knife goes in easily!

Cool the squash
Then split lengthwise into halves
Clean out the pulp and seeds
by scraping the sides of the squash
with a knife or spoon
Save the "goo" in a bowl
why?
the seeds can be cleaned, baked and eaten!
your cleaned squash will
look something like this...
now to turn a squash into spaghetti noodles...
Hold one squash half upright
scrap the inside with a fork
MAGICALLY
strands of squash appear similar to noodles
spaghetti-noodles
Both halves will make about 2-3 cups of noodles
your hulls will look like this when completely
cleaned out

I removed the dark spots in my noodles
caused by cooking
not really necessary but 
it makes your dish prettier.

Place a serving of squash noodles in a plate
Top with your favorite gluten-free marinara or meat sauce
and you have
Squash Spaghetti or is it Spaghetti Squash?

A Flavorful & Easy Main Dish Recipe

My Mom created this dish years ago
My Dad hated it!
but over the years he has grown to
eat a spoonful or two
He calls it "Goo-lock"
so that's what we call it too!
 
Goo-lock is a flavorful & easy main dish
you won't need a recipe card
make this once and
you've got it!
Here we go...
 
Preheat oven to 400 degrees
Brown a pound of ground chuck
drain the beef
and transfer to a mixing bowl
I used my PC large batter bowl
add 1/4 cup chopped onion
1/4 cup chopped red onion
 
add 1 heaping cup macaroni uncooked
 
 add 1 heaping cup sharp cheddar cheese
 Add 16 oz. crushed tomatoes
I used a can of my Mom's homemade canned tomatoes
YUMMY!
Juicer tomatoes cook the macaroni better
Add salt & pepper to taste
Stir ingredients and pour into 8" casserole dish
Cover with foil and put into preheated oven
Cook covered for 30 minutes
Uncover and BROIL for 10 minutes
Sprinkle some more cheese on top if desired.
 Today I served this with
rutabagas, broccoli and fried zucchini
So simple but sooooo good!

The Secret to Flavorful Chicken Salad


Begin with two chicken breasts (about 1 pound)
Bake at 400 for 30-35 minutes
or until done throughout.
This is where I start to do things a bit different
Process the baked chicken breasts in your food processor
to look like this
Add your fruit & veggies
1 cup of quartered red seedless grapes
1 large stalk celery diced
1 medium carrot julienned
1/4 cup diced red pepper
 1/4 to 1/2 cup chopped pecans
I use my Pampered Chef manual food processor
to chop the pecans
so fast and simple
put everything on top
 of your chopped chicken
get ready to combine ingredients
it should look something like this
before mixing
if i don't have red seedless grapes
or if they are not in season and sour,
i use my favorite apple chopped or
chopped strawberries tastes wonderful also!
now for my secret ingredient
drum roll please...
to bind all the dry ingredients together
use about 3 tbsp. Hellman's mayonaisse
( Hellmann's is gluten free!)
1 to 1 1/2 tbsp of red wine vinegar
(Pomegranate infused provides healthy antioxidants)
1 heaping tbsp of sugar to balance the acid
AND
my "go-to" seasoning always, always
(but don't tell anyone)
The Secret to Flavorful Chicken Salad...
MRS. DASH ORIGINAL!!!
salt & pepper to taste
 Oh, and...
everything is better and healthier 
with a fresh squeeze of lemon.
and...that's right
no onions in this chicken salad!
this is what you get.

perfect chicken salad
every time.
add some crackers or toast 
(gluten free of course),
on a bed of spring greens
and 
ENJOY!
So fresh, So flavorful
stored in an air-tight container
for at least 7 days!
Double the recipe because
you're gonna love it!
my family never gets tired
of eating this flavorful chicken salad.
They even ASK me to make it!!!

Bite-size Strawberry Tart

We indulged in a strawberry pastry in Paris
Two of them actually
looked something like this...

neh, nah, didn't happen
I used the tart as inspiration though
to create a small dessert for my daughter
who's carrying my first granddaughter (YES!!!)
It had to be tasty, less filling and WEIGHTLESS!
Having to use what I had on-hand, I thought...
scoured my panty and fridge
decided on these staple ingredients.
 Slice strawberries as desired
small is my style

cinnamon raisin bread is beautiful toasted
and it creates a firm base for the tart

cut the bread into four bite-size pieces
spread on a bit of strawberry cream cheese
cheese is good, low fat high protein
 and finish off with key lime oikos greek yogurt
again...low fat high protein
sprinkle with strawberry pieces & a pinch of sugar

Yummy!

 the combination of tastes in one bite is just the right mix of
EVERYTHING!
