Review of Homemade Pimento Cheese Recipe

Saw this recipe for

Homemade Pimento Cheese

 on facebook the other night

it brought back memories


 because I had made this before and L.O.V.E.D. IT!

 2 Cups of Sharp Cheddar
8 oz. of softened Cream Cheese
1/2 Cup of Mayo
1/4 Teaspoon Garlic Powder
1/4 Teaspoon of Onion Powder
1 Jalapeno Pepper, seeded and minced
1 (4 oz.) Jar of Pimento, drained
Salt & Black Pepper (to taste)


Are you THAT person, like me, who can't follow anything (especially a recipe) or anybody?

except Jesus and Momma, of course 

It's not that I can't follow, I can...but
I don't always have the "called-for" ingredients
so...
I improvise
Everybody got time for dat! 

Didn't have garlic power, used garlic salt (hence no regular salt added)

Didn't have onion powder (we love onion so i used the real thing about 1/4 cup)

Used 3 cups sharp cheddar (yum)

Was really undecided about using jalapeno but I did...which means I washed my hands 24 times instead of the usual 12 while cooking.

Throw it all in a bowl and mix

give it the spoon test

it's gotta stand straight and tall
I don't like runny pimento cheese

 Then...Do a taste test

 You can keep your right eye all the way open while tasting
I just can't seem to manage it 

EXCELLENT!

How to Get Some Respect

"I get no respect!" This phrase was made popular by comedian Rodney Dangerfield. I still say it sometimes when I feel my family is on my case, do you? We all probably feel disrespected at times. The word respect means  "differential regard or esteem".  People groups have their own "respect" rules. For example,if you're in the medical field, you lean toward people in medicine. You relate to them better because you have something in common and respect their knowledge.  It's that way with all groups. One religious "joke" about people groups is Baptist think they're the only ones going to heaven because they solely interpret the Bible correctly. Not true! Politicians hobnob with politicians and educators admire other educators. If you're not a "member" of a people group by association, education or genetics, it's hard to get in!

The Bible tells us in Acts 10:34-35 Then Peter opened his mouth, and said, "Of a truth I perceive that God is no respecter of persons: But in every nation he that feareth him, and worketh righteousness, is accepted with him." Peter spoke this after Cornelius had bowed down to worship him. People held Cornelius in high regard. The Bible calls him a centurion that feared God and was of a good report among all the nations of the Jews. After Cornelius stood up, Peter went on to admit "Ye know how that it is an unlawful thing for a man that is a Jew to keep company, or come unto one of another nation; but God hath shewed me that I should not call any man common or unclean." God accepts everyone!

So you see, people groups have been having conflicts for as long as history has been recorded. Wars have been fought over nothing more than one group not liking another group. I see this all the time in our society, especially with Americans and Hispanics. The story of Peter and Cornelius ends like this. Peter preached Jesus to the group and all that believed were saved and baptized. Wouldn't it be awesome instead of giving ourselves respect and high regard that we direct our praise to the person who deserves it...JESUS? Then, we could follow Peter's example, spread the gospel and see people accepted.

Pande-"monday"-ium of Laughter

Have you ever had a kidney stone?

 Ok, yeah, so I don't have to explain too much!

Personally, I can't sit down when I have a stone! Irrationally, I think that gravity will help yank the gravel out of my body but usually doesn't because...
You're trying to get this...



OUCH! OUCH! OUCH!

...through that
ALMOST IMPOSSIBLE!
Let's not talk about stents, peeing after lithotripsy or the nagging feeling of a stone, OK?
I have a funny story (well, now, it's funny) about the next to last time I had a kidney stone (February 2012). Steve had taken me to the doctor's office in excruciating pain. I've had 25+ stones but this one was THE MOTHER! I paced, I sit down, I stood up, Steve rubbed my back, Steve squeezed pain pressure points to try to get me some relief. NOT WORKING! We waited in that doctor's office for (no exaggeration) 4 hours to see the doctor.
Right before the doctor walked in, I had this haunting feeling (and even said it to Steve) that they didn't keep medical supplies in the office. I said "I bet they don't keep shots in here and I'll have to go to the ER!" Shore 'nuff, doc sent me to the ER with a caring look on his face. Didn't help my pain none.
Get to the ER downstairs and of course, a new registration clerk couldn't work a computer. I usually don't snap but I SNAPPED this time. *&%$(*#&^  About the time all those ugly word vomits were spewing out of my mouth,
MY PAIN STOPPED!
Just like that... I turned to Steve and said "My pain's gone." He said "Still wanna check in?" I said "I'm getting the morphine, no-matter-what!"
Right about here you may be calling me a junkie but if you've ever had a kidney stone, you can appreciate that
 I DESERVED the morphine!
Plus, you kinda have a pain hangover after the pain stops without any drugs. You just want to feel better so I took the shot!
Here's the funny part. . .
The nurse came in to get me into a hospital gown. She said "The doctor wants you admitted. He may do surgery tonight." At this point, no argument from me. (CT Scan confirmed still had the stone.) Steve's standing in the corner of the room while the nurse is helping me undress,
Before any Introductions.

There I am, naked from the waist up and she turns to Steve and says "Are you her husband?" and Steve replies "No ma'am. I'm her pastor."

It might have been the funniest joke ever if I hadn't been in the ER! The look on the nurses face is unforgettable. She stumbled and stammered until he told her the truth and he was kind enough to wipe the sweat from her brow since he had caused it. lol The rest of the afternoon "the pastor" was the talk of the ER with nurses, orderlies and doctors coming around to meet and greet the pastor and his wife.
