Gluten-Free Chicken Alfredo

My husband LOVES alfredo sauce! I hate milk. 

He has gluten sensitivity and lactose intolerance. I want to keep him feeling well which means he's less cranky (know what I mean?). He requested this favorite of his. I delivered! I used the ingredients pictured right down there to make this deliciousness gluten free and allmmoossttt (I'm stretching it) lactose free. I can vouch for him. I'm pretty sure he didn't experience any discomfort because I didn't hear nor smell any.  :)


I made quite a few substitutions in the recipe I used to make absolutely sure it was gluten-free. For example, I replaced the butter with Ghee and the regular cream cheese with Go Veggie!. I used Lactose Free Milk 2% (only one cup) and our favorite gluten-free pasta De Boles Rice Penne. Mrs. Dash Garlic & Herb is a flavorful staple of mine so I was excited to see it used in this recipe. I couldn't find the Parm lactose free, hence the allmmoossttt lactose free. I grilled some chicken tenders for additional flavor and tossed it on top of the pasta.

Is this the best Chicken Alfredo one has ever eaten? Probably not. Is it a very viable substitute of a favorite dish for a gluten and lactose sensitive individual? ABSOLUTELY! My husband enjoyed it or at least he said he did! Try it out and leave me a comment with your review.

How to turn Gossip into Good!

Do you remember the last time someone wanted to hear your  juicy conversation and anxiously yelled "Tell me, tell me!"? Did you tell them? If you did, you are not alone. A Social Issues Research Center reported that gossip accounts for 55% of male conversations and 67% of women's conversations, a much smaller gap between the two sexes than originally thought.

The truth is not gossip, right? That is correct. Gossip is malicious talk of unconfirmed or false origin. Proverbs 15:1-3 reads "A soft answer turneth away wrath: but grievous words stir up anger. The tongue of the wise useth knowledge aright: but the mouth of fools poureth out foolishness. The eyes of the Lord are in every place, beholding the evil and the good."

What about spreading good news that is true? Mark 16:15 instructs us to "Go ye into all the world, and preach the gospel to every creature." One line my pastor said this past Sunday stuck in my head. He said "We should pass on the good news!" Immediately, the ugly face of gossip jumped into my mind. God quickly replaced my thought with his revelation. Telling the good news about the truth of Jesus Christ makes one a "GOD"-siper, not a gossiper! Psssttt, pass it on!
